Cut a bunch of green onions in half, making sure to reserve the upper dark green half for garnish. Use the lower light green part for the marinade. Using either a knife, food processor, or mini chopper, mince the green onion (light green part) and garlic cloves.

Combine the minced green onion and garlic mixture with soy sauce, white vinegar, a can of chipotle peppers and adobo sauce, hoisin sauce, smoked paprika, and black and white pepper. Stir to combine the ingredients, then add the bone-in chicken and massage the chicken with the marinade. Leave to marinate for at least 15–20 minutes at room temperature.For reduced spice, add half the can of chipotle peppers and adobo sauce.

To cook on the BBQ, preheat your grill on maximum heat for 10 minutes. Then add the chicken to the grill, reduce the heat to medium, lightly sprinkle salt all over the chicken pieces, and close the grill cover. Cook for about 10–14 minutes per side, or until fully cooked.

To cook in the oven: Preheat the oven to 425°F. Arrange the marinated chicken pieces on a lined baking sheet or in a baking dish, leaving some space between each piece. Lightly sprinkle salt over the chicken. Bake for approximately 35–40 minutes, flipping halfway through, or until fully cooked.

To cook in the air fryer, arrange the chicken pieces in a single layer, making sure not to overcrowd the basket. Lightly sprinkle salt over the chicken. Air fry at 375°F for approximately 25–30 minutes, flipping halfway through, or until fully cooked. Temperature may vary depending on the air fryer.

Optionally, make a sauce by pouring the excess marinade into a saucepan. Bring to a full rolling boil, then reduce to a simmer over medium heat for a couple of minutes, until slightly reduced. If the reduced sauce is too salty, add a small splash of water to dilute.
