Peel and cut yellow potatoes into quarters. Add them to a pot, pour enough water to cover the potatoes then cover with a lid and place on high heat to bring to a boil. Once boiling, remove the lid and cook the potatoes for 15-20 minutes until very soft and fork tender.

Drain potatoes into a sieve then return the potatoes in the sieve placed over the pot and return back to the burner. The heat can be off or on low. Leave for about 5-10 minutes to allow the residual steam to evaporate any excess moisture from the surface of the potatoes.

Once potatoes have cooled slightly, either mash with a potato masher or for a very smooth and buttery texture push the softened potatoes through the sieve into a large bowl.

Gently warm some heavy cream and melt butter then add both to the mashed potatoes. Add in garlic salt, salt & black pepper and use a spatula to work all the ingredients together until well combined.

Optionally incorporate grated pecorino Romano (if it goes with the flavours of your main meal) and garnish with fresh parsley.
