Start by cutting the chicken into bite-sized cubes. preparing the marinade ingredients by mincing garlic cloves, finely chop rosemary leaves and grind coriander seeds.Â

Prepare the marinade by combining olive oil, lemon juice, minced garlic, greek yogurt, oregano, rosemary, ground coriander, salt, black pepper and mustard. Add in the chicken and mix well. Marianne ideally for 2–4 hours for tender chicken.Â

While the chicken marinates, make the Greek-style dressing by combining mayonnaise, avocado oil, white vinegar, lemon juice, garlic powder, black pepper, oregano and salt. Blend using an immersion blender until well combined.Â

Prepare the salad ingredients by chopping romaine lettuce, cherry tomato, cucumbers, red onion and feta cheese.
