Instructions

  1. Thinly slice chicken breasts into long, even strips. In a bowl, combine chicken with olive oil, lime juice, smoked paprika, garlic powder, cumin, white pepper, black pepper, and salt. Toss well to coat and let marinate while you prepare the remaining ingredients.

  2. Slice green bell pepper, red bell pepper, and onion into thin, evenly sized strips and set aside.
  3. Dissolve a chicken bouillon cube in ¾ cup hot water and let it cool for 5–10 minutes. In a small bowl, whisk 1–2 tablespoons of the cooled broth with 2 tsp of cornstarch until there are no clumps, then stir the slurry back into the remaining broth.
  4. To make the sauce, combine mayonnaise, chipotle hot sauce, and lime juice until smooth. Adjust the amount of chipotle hot sauce to your preferred spice level.
  5. Preheat a large skillet over medium heat for 3–4 minutes. Add 1 teaspoon of beef tallow or high smoke point cooking oil. Working in batches if needed to avoid overcrowding the pan, cook the chicken for 3–5 minutes, until mostly cooked. The chicken doesn’t need to be fully cooked as it will be added back to the pan to cook with the starch water. Transfer the chicken to a plate.
  6. Increase the heat to medium-high and add another teaspoon of beef tallow or oil. Add the sliced peppers and onions, season lightly with salt, and sauté for 4–6 minutes, or until tender-crisp. Return the cooked chicken to the skillet and pour in the starchy broth mixture. Mix well and simmer for 2–4 minutes, until the sauce thickens slightly and coats the chicken and vegetables.

  7. Lightly warm flour tortillas for about 10 seconds in the microwave or in a skillet to make them easier to fold.

  8. Sprinkle mozzarella cheese over the centre of each tortilla, top with the chicken fajita mixture, and drizzle with chipotle mayo. Fold in the sides and roll tightly into a wrap.

  9. Preheat a large skillet or griddle over medium heat. Melt 1–2 tablespoons of butter in the pan, then place the wraps seam-side down. Toast for about 1 minute per side, or until the tortillas are golden brown and crispy.
