This authentic Greek chicken souvlaki recipe features tender, marinated chicken skewers grilled to perfection with bold flavors of lemon, garlic, and oregano. Start by cutting the chicken into bite-sized cubes. preparing the marinade ingredients by mincing garlic cloves, finely chop rosemary leaves and grind coriander seeds.
Prepare the marinade by combining olive oil, lemon juice, minced garlic, greek yogurt, oregano, rosemary, ground coriander, salt, black pepper and mustard. Add in the chicken and mix well. Marianne ideally for 2–4 hours for tender chicken.
While the chicken marinates, make the Greek-style dressing by combining mayonnaise, avocado oil, white vinegar, lemon juice, garlic powder, black pepper, oregano and salt. Blend using an immersion blender until well combined.
Prepare the salad ingredients by chopping romaine lettuce, cherry tomato, cucumbers, red onion and feta cheese.
When ready to cook, line the marinated chicken onto metal skewers.
Preheat an outdoor grill or a grill pan to medium-high heat. Grill the chicken skewers for about 3 minutes on each side until grill marks are apparent, brushing the chicken with lemon butter in between cooking. Then cover with a lid, reduce the heat to low and cook for another 5 minutes.
Drizzle the greek style dressing over the salad and chicken to enjoy.
