Ingredients

  • 2 Chicken breasts
  • 1 tsp Baking soda
  • 1 tsp Soy sauce
  • 1 tsp Rice vinegar
  • Salt (to taste)
  • White pepper (to taste)
  • Vegetables
  • 3 tbsp Avocado oil
  • 1 Broccoli crown
  • 1 Red bell pepper
  • 1/2 Red onion
  • Salt (to taste)
  • Coconut curry
  • 1 tsp grated Ginger
  • 6 Garlic cloves (minced)
  • 1 tsp Gochugaru red pepper powder/flakes
  • 2 tsp Curry powder
  • 4 tbsp Peanut butter (heaping)
  • 1 can Coconut milk
  • 1 Chicken boullion cube
  • 1.5 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 2 tbsp Oyster sauce
  • 2 tbsp Gochujang hot sauce (substitute w/sriracha)
  • 1 cup Water
  • 4 pc Udon noodles
  • Crushed peanuts (Garnish)
  • Fresh cilantro (Garnish)
